Ingredients
125g caster sugar
125g cornflour
2 cups plain flour
250g butter, melted
125g caster sugar

Method
Mix dry ingredients together.
Mix in butter until well combined.
Press into ungreased 28cm x 18cm lamington pan and bake at 170C for 30mins.
Remove from oven, cut into 24 squares, sprinkle evenly with caster sugar and prick each piece with a fork.
Return to oven for 15 mins. Cool in tin.
